Pineapple-Coconut Rice
 
 
Serves: 2 cups
Ingredients
  • 1 13.5 oz. can coconut milk + water to make 2 cups
  • 1 cup long grain white rice
  • 1 8 oz. can crushed pineapple
Instructions
  1. In a medium saucepan, over medium heat, bring liquid to a boil.
  2. Stir in rice.
  3. Reduce hear to low and cover pan.
  4. Simmer for 20 minutes.
  5. Remove from heat and allow to rest for 5 minutes.
  6. While rice is resting, microwave pineapple for 30 seconds.
  7. Stir in pineapple.
