Pineapple-Coconut Rice
- 1 13.5 oz. can coconut milk + water to make 2 cups
- 1 cup long grain white rice
- 1 8 oz. can crushed pineapple
- In a medium saucepan, over medium heat, bring liquid to a boil.
- Stir in rice.
- Reduce hear to low and cover pan.
- Simmer for 20 minutes.
- Remove from heat and allow to rest for 5 minutes.
- While rice is resting, microwave pineapple for 30 seconds.
- Stir in pineapple.
