In a medium Saucepan, combine:
1 Cup Fresh Orange Juice
1/4 Cup Water
2/3 Cup Sugar
Pinch of Salt
3 Cups Fresh Blueberries
Cook over medium heat until liquid begins to boil, then reduce heat to low to simmer.
In a small bowl, Combine 4 Tablespoons of Cornstarch and just enough water to make it liquid.
Pour Cornstarch mixture into Orange Juice-Blueberry mixture. Continue stirring gently for about 15 minutes until sauce becomes thick enough to coat the back of a metal spoon.
Stir in 1/2 Teaspoon Almond Extract and reduce heat to low and keep warm until ready to serve.
This sauce would be wonderful on Ice Cream or Pound Cake, as well.
