Chicken Pizzaiola over Spaghettini
In a deep skillet, or saucepan, over medium heat, saute:
1/4 cup Olive Oil
1 medium Onion, diced
2 cloves Garlic, minced
When onion begins to soften, stir in 2 pounds Roma Tomatoes, quartered. Cover pan, and stir about every 5 minutes until peels start to separate from flesh (about 25 minutes).
Add:
Salt and Pepper, to taste
15 Basil leaves, chiffonade
For the Chicken
Place in a gallon-size ziploc bag:
1/2 cup Flour
Shake until well-blended, then add 2 boneless, skinless Chicken Breasts, one at a time.
Place each Chicken Breast in heated Olive Oil.
Cook for about 8 minutes on each side until lightly browned.
Remove Chicken from pan and cover with foil.
Deglaze pan with 1 cup White Wine, stirring until the sauce begins to thicken.
Add 4 ladles of sauce to the pan, stir until thoroughly combined, then return Chicken to pan and ladle a little more sauce on top of each piece.
Reduce heat to medium, and continue to cook for 15 minutes, turning every 5 minutes.
Top with thickly sliced Mozzarella Cheese, place lid on pan, and cook for another 5 minutes until cheese is melted.
For the Spaghettini:
Cook 1 pound Spaghettini (thin Spaghetti) according to package directions.
Drain, and add to remaining Tomato Sauce, stirring until thoroughly combined.
Place some pasta on each plate and top with Chicken. Garnish with fresh Basil.

Susan, I love to find plated main courses when I visit your journal, you are always giving me so much inspiration. I am planning on trying the chicken tonight, do you think I could prepare it ahead of time, and bake later on until the cheese melts? Thank you!

Thanks, Megi! I’m so glad you liked it! I was really happy with how well it turned out – we had the leftovers tonight. We just diced the rest of the chicken & tossed it with the spaghettini.
