Blue Cheese Salad

Place Romaine lettuce leaves in the center of a salad plate, top with Creamy Blue Cheese Dressing and Bacon Bits.

Creamy Blue Cheese Dressing

Whisk together:
1/2 cup Mayonnaise
2 Tablespoons White Wine Vinegar
1 teaspoon Dijon Mustard
A bit of Salt and Pepper
4 ounces Blue Cheese

Crab Corn Chowder

Ingredients
  • 6 cobs corn
  • 4 Slices Bacon
  • 1 Red Onion
  • 1 Clove Garlic.
  • 2 Tablespoons Flour
  • 1 pound Red Potatoes, cut into 1-inch cubes
  • 3½ Cups Chicken Broth
  • 2 Cups Half-and-Half
  • 1 pound Crab Claw Meat
  • 2 Tomatoes, diced
  • 10 Basil leaves, chiffonade
Instructions
  1. Strip Corn from 6 cobs - reserve cobs
  2. In a stockpot,over medium-high heat fry Bacon.
  3. Set bacon aside, then saute onion in Bacon Fat.
  4. When onion begins to soften, stir in Garlic.
  5. Add Flour, stirring to coat onions.
  6. Stir in Chicken Broth, Half-and-Half, Corn, Corn Cobs, Red Potatoes.
  7. Bring to a boil over high heat.
  8. Reduce heat, cover, and simmer for 15 minutes, or until potatoes are easily pierced with a fork.
  9. Remove and discard corn cobs.
  10. Stir in Crab Claw Meat, Tomatoes.
  11. Top with Crumbled Bacon and Basil.

    Susan! I can’t tell you how nice it was to get feedback on that cake. So glad you enjoyed it and took the time to let me know. So sweet. Its so good I hate to tell people the recipe. Sometimes I get a bit irked that they go on and one about it to tell you the truth. lol. lol. Today everything in your creative meal has bacon in it. Have I died and gone to heaven?

    Both of these dishes look fabulous! Bill loves a blue cheese dressing and a simple salad with romaine and bacon is perfect. And I’d dive head first into your corn and crab chowder…mmmm.

    Yes, I think we should have a huge Dorista grand finale party! Can you imagine how much fun we’d have???
