French Fridays With Dorie: Quiche Maraichère

April 11, 2014 by susanelester

Just delicious!

This week’s French Fridays with Dorie challenge is for Quiche Maraichère which is essentially a Farmers’ Market-inspired dish filled with vegetables and custard, topped with cheese.  I made a couple of changes to Dorie’s recipe – I swapped out Asparagus for Red Peppers (because I can’t eat them), and I added a little bit of fresh dill to the custard.

Freshly grated Fontina for the top!

One bite of this quiche will take you right back to Les Deux Magots!  It is that good and that fresh.  This quiche will make repeat appearance in our kitchen.

Yummy fresh vegetables!

This quiche is as delicious as it is easy to make!  It was absolutely perfect with a salad for a weeknight dinner.  We think it would also be great with chicken or shrimp added into the mix.

Bon Appetit!

Ohhh, those pictures, Susan. Beautiful. I forgot that I also threw in some leftover asparagus. Channeling SL. My goodness, I didn’t even write that up in my Post. Need to do a PS – Mary goes creative. I liked the less is more approach to the filling and agree that shrimp or crabmeat or even chicken would make a good and more meal-hardy addition. Thanks for those suggestions.

I really love how versatile this quiche is… you really can change around vegetables and cheese to keep the concept fresh.

I resisted all urges to make subs on this one for some reason but even as i did so I knew it would be even better with fresher veggies like asparagus. And real fontina is a delight, isn’t it? I bet this was great!

Asparagus sounds like a great substitution. Yesterday was the official start to asparagus season here in Germany (I’m not making that up, they have an official start day) but it’s been in the markets for a few weeks now and we’ve been eating it like mad.

Asparagus! I like the extra color this brought to your quiche (and I am sure it tasted great too). Fontina is never a bad idea, either 🙂

Lovely photos! This would be good with any of those additions, I agree, but I was so pleased with how delicious it was as written, too.
