Davidson’s Safest Choice Eggs: Chicken Caesar Salad

John’s favorite  salad is Caesar, so when I was asked to try Davidson’s Safest Choice Eggs, I knew they’d be a great fit for our blog.  What distinguishes them from other eggs you can buy at the supermarket?  They’re pasteurized in a gentle warm water bath which eliminates the risk of Salmonella before the eggs even enter your kitchen.  This makes them perfect for any recipe that requires raw eggs, like Caesar Salad Dressing.  There is absolutely no comparison to the fresh taste of homemade salad dressing.  This one is quick to whip up and is destined to become a family favorite.

Chicken Caesar Salad

Grill 2 skinless, boneless Chicken Breasts, and slice thinly.

To make the dressing:

In a large measuring cup, add:
3 cloves Garlic, crushed
3 Anchovy Filets
1 Davidson’s Safest Choice Eggs Egg Yolk
1 Tablespoon Whole Grain Mustard
Juice of 1 Lemon
Whiz with an immersion blender.
When ingredients are fully blended, continue to whiz while pouring 3/4 Cup Olive Oil into dressing
Add freshly ground Pepper and Sea Salt, to taste.

To make the salad:

Place shredded Romaine Lettuce in bowls, then add store-bought Caesar Croutons and shaved Parmesan Cheese.
Toss salad while streaming Caesar Dressing into it.
Top with sliced, grilled Chicken and extra shaved Parmesan Cheese.  You can also add extra anchovies, if you like – John did!
This recipe would work equally well with grilled Shrimp or Scallops.

Leftover Caesar Dressing can be kept in a sealed container in the refrigerator for up to 5 days.

    Love a good Caesar dressing (one of my favorite uses for anchovies) and make lots of other dishes that use raw eggs. I will look for these in the store!
