
This week’s Baked Sunday Mornings challenge is for Gingersnaps with Lemon Sugar. Â Oddly enough, as much as I like ginger in savory dishes, I really dislike ginger in sweets. Â So, with a pile of ripe bananas, I searched the Baked Occasions index for banana recipes. Â Although Matt and Renato dedicated an entire chapter to bananas in Baked Elements, Baked Occasions has only two banana recipes in it, so I opted for the “Caramel-y Banana, Peanut Butter, and Chocolate Bread Pudding.” Â Unfortunately, I can’t share the recipe with you yet because it hasn’t been posted.

The Gentlemen Bakers created this recipe to celebrate Elvis’ Birthday on January 8th.  It’s truly decadent starting with a layer of bittersweet chocolate, peanut butter-imbued custard, caramel-coated bananas, then topped with another layer of peanut butter-imbued custard.  The texture and flavor of the bread pudding and melted chocolate were lovely.  Somehow, the caramelized bananas didn’t complement the bread pudding as well as I had hoped they would.  John makes amazing Bananas Foster and I wonder if these caramelized bananas would benefit from a shot of rum.
I think I’ll try this again when it comes up on the recipe schedule with a few tweaks.

I’m not really looking forward to this recipe – not a huge fan of bread pudding, anyway. And ew, peanut butter. But I’ll forge ahead when it comes up on our schedule!
Now bananas foster – that’s a dessert I could wolf down any time.
This recipe looks sooo good! I’m always a little wary of banana recipes, and there’s a good chance I would modify it too (just because I find them icky), but it has a lot of promise. I like how you picked another January recipe. 🙂
Sounds like a wonderful, gooey mess! 🙂 I never knew you don’t like ginger in sweets! I don’t know why, but that surprises me! But I shock people when I tell them I have never had coffee or tea in my life and that I don’t eat coffee-flavored ice cream (or anything)! Probably more shocking than not liking ginger in sweets!
Wow, Susan this bread pudding looks phenomenal! I do love bread puddings. They are just so warm and comforting. But the flavors in this are wonderful. Bananas and peanut butter. But I’ll gladly take that shot of rum, too! Beautiful photos as always! : )
