This week’s Baked Sunday Mornings challenge is for Light and Lemony Jelly Roll with Raspberry Cream Filling.  The raspberry cream is so delicious, you’ll be lucky to have enough left for the jelly roll.  Okay, I did have to practice some self-restraint because this is one of the recipes I tested for Baked Occasions.  If you’re looking for a special dessert for your Easter dinner that’s as delicious as it is beautiful, this is it.  It’s light enough to enjoy after a meal, or as part of a dessert buffet.  I love the flavor combination, too!

    I think I might be an outlier in not loving the raspberry cream… But your cake is so lovely!

    Beautiful! It looks and sounds so good. I will have to try this at some point. Seems like a perfect spring/summer dessert.
