
This week’s Baked Sunday Mornings challenge is for Red Wine Chocolate Cupcakes with Chocolate Glaze which is one of the recipes that I tested for Baked Occasions.  They were moist and delicious but instead of making them again, I wanted to make up the Buttery Pound Cake with Salted Caramel Glaze that the Sunday Morning Bakers made a few weeks ago.

This pound cake is delicious, but it was the caramel glaze I couldn’t get enough of!  I’m absolutely certain we’ll make it again, soon.  It would be amazing for so many things – especially apples.  The use of cake flour and good, quality butter gives this cake   a tender crumb – it would make a perfect accompaniment to summer berries.

Salted caramel is definitely one of those things that just keeps you begging for more, isn’t it? And I love a good buttery pound cake. One of my students (for a research project) attempted to make a pound cake and replace the butter with olive oil or yoghurt. What, what? Are they still teaching our children that butter is evil?? Susan….both the cupcake and the pound cake look delicious! But you are right….that caramel glaze is killer! Perfect for the pound cake, but I could think of dozens of other uses for it, too! I most definitely want to try this recipe this summer! : )
